reason #57920 why i heart the pioneer woman

We're typically not soup people; not sure why but we tend to never eat it.

Unless, you count my supply in the pantry of ramen noodles, but it doesn't really count as soup because I make as directed then stir it up and drain the water.  It turns into really just delicious carby noodles that provide no nutritional value what so ever.

I know I'm weird like that.

But I saw on The Pioneer Woman's website a recipe for Chicken Noodle soup and her pictures just made that soup look so irresistible I had to give it a go.  I was a bit nervous because I had never cooked with a whole cut up chicken before and I have this fear of raw chicken, but I put on my big girl panties and came out of my comfort zone and we're still alive today so I think we're good.

Y'all it was like eating bliss from a bowl.  It puts my ramen's to shame for sure.  I did change it out and made it with peas and carrots rather than onions and celery cause I'm not an onion fan and forgot the celery, but who cares I may add some frozen corn next time if I'm feeling sassy.

If there is a next time I whip this up because it makes a truckload of soup and I'm pretty sure we'll be eating from this supply for the rest of our lives even after I feed our whole block.  Which by the way, any tips on freezing soup?

I LOVE PW. Love her. I got her cookbook for Christmas last year & it is so awesome. Her chicken spaghetti is one of our favorites! I will be making her chicken noodle soup this winter for sure!

FYI, there are lots of great recipes that use the ramen noodles i.e. Asian beef. Of course I never manage to get the recipe and ramen pack at the same time :(
I'm kind of a freezer freak. Love the idea of a big day of cooking to stock up for quick meals. Anything that has fat in it can be frozen and reheated successfully. Either use small plastic containers - avoid air, or try freezer baggie in a cup to freeze the soup in an easy to manage shape.

oh yum! i'm not a huge soup fan either but this one looks delicious! she has the best recipes. she also has a recipe for corn chowder that looks amazing!

I'm not really a fan of soup either, but I do usually like chicken noodle soup. Maybe I'll have to try it!

I love PW! I actually got to meet her at her book signing this past spring! She signed my book and I got a picture with her. Her baked mac & cheese pretty much rocks my socks off! Try it!
